So I figure now is as good a time as any to relay some big news...
I'm heading off to London and Paris on Sunday! Classes end on Friday and then two days later I'll be on a plane for my first time abroad ever!
I'm so excited I try not to think about it often... it makes studying almost impossible.
And in my last week home to prepare for my trip, I haven't gone to the gym once and have been busy eating strawberry doughnuts.
I know, I know, I don't know what's wrong with me either.
But these doughnuts were so worth it.
But these doughnuts were so worth it.
The other morning I woke up with a craving for strawberry glazed doughnuts, but a quick internet search yielded nothing what I had pictured in my head. So I just made them up!
I was lucky enough that someone ordered some the next day, because when I made them a second time they were absolutely absolutely perfect. And these babies are still baked, so they're not as bad as the fried ones.
(That's my argument to myself - and we're going to keep it that way)
I love these so so much, and am so glad I created them, and I think you will be too! :)

Strawberry Glazed Doughnuts
Servings: 10 doughnuts
Ingredients:
Doughnuts:
1 cup flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
1/3 cup milk
1 egg
1 tbsp melted butter
10 medium to large strawberries (between 1/2 and 3/4 cup depending on size), pureed with 2 tsp seedless strawberry jam
1 tbsp pure maple syrup
Glaze:
3 cups powdered sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 cups cold milk
Directions:
Preheat oven to 425 degrees. Grease a 6-doughnut pan with baking spray. To make doughnuts combine dry ingredients in a large bowl and whisk together. Create a well in the center of the dry ingredients and add in milk, egg, butter, and maple syrup. Stir until well combined. Stir in strawberry mixture, starting with 1/2 of it and adding more only if needed. Batter should be wet, but not runny. Put dough into a pastry bag or plastic bag and snip approx 1-inch off end. Pipe batter into each well, reserving extra batter. Bake for 7-9 minutes until doughnuts spring back when touched. Let cool five minutes and turn onto a cooling rack to cool completely. Spray pan again and continue with the rest of batter until all doughnuts have been made. While doughnuts are cooling make glaze. To make glaze, stir all ingredients together until smooth. When doughnuts are cooled dip each into glaze (twice if you want to be naughty about it) and place back on cooling rack to let glaze set. When glaze has set enjoy!
(some notes - added 9/24/12 - A few people have commented that they enjoyed adding some leftover strawberry puree to the glaze for even more strawberry flavor. While I have not tried this personally I think it's a great idea and something to pursue if you feel you would enjoy it as well. Also a few people have noted their donuts are flat. The most common case for this would be a too runny and wet batter. If you fear this might be the case, err on the side of a drier batter, mixing in puree only until just moistened with no flour streaks remaining. Good luck! - Mary)

DeleteCan you give a measurement for the 10 strawberries or an approximate size of each berry? We just went and picked fresh ones and they vary in size from a dime all the way up to a golf ball.
ReplyDeleteI would make a guesstimate that my strawberries were around 3/4 cup given the varying size of them. I would assume there can be a little give and take with that, as the important part of the recipe is that when you add the wet mixture to the dry, you want the batter to be wet but not runny. The next time I have a go around with the recipe I can try and pinpoint a more exact measurement if you'd prefer, but I have a feeling it will shift slightly every time. The key is to make the batter wet but not runny. I hope this helps!

ReplyDeleteMine shift in pink-ness every time I make them (as strawberries don't come in one consistent shade of red). If pink-ness is important to you you could always consider adding a drop or so of red food dye to the mix! Im so glad you liked them. And better to err on the side of not runny, because once they cross that line it's hard to come back!

ReplyDeleteThe amount of ingredients for the recipe should definitely still work, however I'm not sure how many mini donuts it will yield. As for the cooking time, I would say start checking possibly after 3 minutes or so and then onward until the donuts spring back when touched. I've never used a mini one before though so check to see if on the pan it comes with a standard recipe that hints to a cooking time. Good luck and feel free to let me know how it goes! :)

ReplyDeleteIf you attempt them again perhaps try adding a little more powdered sugar to your glaze to make it thicker, or perhaps after the first dip in the glaze, allow it to set and then dip again. I'm always a fan of multiple dips. I hope this helps! Come back soon.

DeleteMy doughnuts did not turn out as pink and pretty as yours, but they were still good! Plus I used white whole wheat flour which may have something to do with it;) My daughters loved them! I had some puree left over so I added that to the icing hoping to get a more pink color, my 2 yr old adores anything pink. I think it helped add some more strawberry flavor. I will definitely be making these again!

DeleteI really liked the flavor of mine, however I preferred them without the glaze because you could taste the fruitiness more without the addition of the very sweet glaze. The texture was very muffin-like. This was my first attempt at baked doughnuts so maybe they all turn out this way, but I was surprised with the texture. Still very yummy!

DeleteI made these today, they didn't turn out like your picture looks (your picture looks fabulous)... I'm sure it was the way I mixed it up because mine ended up really flat once I took them out of the pan. BUT they taste fabulous. I was only able to get 12 donuts out of the recipe tho... not sure if that's normal.
ReplyDeleteSince it only made 12, I adjusted the glaze quite a bit. Used 1 c powdered sugar, 3 T milk, 1/2 tsp vanilla (I love vanilla) and just a sprinkle of salt.
For those of you on Weight Watchers... my recipe (with the glaze) ended up being 3 pts per donut (keep in mind much of the glaze dripped off and I didn't even use all of what I made to begin with... so i adjusted for that).

Finally found a donut silicone pan and tried this recipe. My husband thought they were good but not sweet enough...Any suggestions to making them sweeter?? Does it make a difference of using frozen vs. fresh strawberries?
ReplyDeleteHmm it is possible that you could add a bit more sugar without the texture being compromised but this is something you would have to play around with and see. Also I'd never say no to a second dip in glaze for more sweetness. In my experience frozen strawberries retain more water than fresh so just account for that if you thaw them or puree them frozen. ReplyDeleteI'm really sorry these didn't turn out as you expected. I found pink-ness varied from batch to batch (as does color in nature) so if you weren't opposed to artificial coloring a drop or two (or your desired amount) of red food dye would ensure a pink batch of your liking every time. For extra strawberry flavor you could always consider adding some extra puree into the glaze as some suggested they had enjoyed. Hope this helps and thanks so much for stopping by!
DeleteThese did not work out for me very well either. The donuts themselves were flat and soggy (perhaps the batter was too thin) and they didn't have much flavor. I am not opposed to trying them again. I like the idea of adding some of the strawberry puree to the glaze instead of milk.
ReplyDeleteIf this seemed to be your problem and you'd like to try again I recommend erring on the side of a dryer batter, adding puree until it is just moistened enough to see no streaks of flour. DeleteMY OH MY!!! Just finished baking these up. My first baked doughnuts ever and let me say I impressed myself :) I got a doughnut pan from goodwill $2 and my batter made 6 there was enough left over batter for 2 more doughnuts. I added about 1/2 C more of flour due to it looking a little runny after adding the strawberry mix! I saved a little of the strawberry mix for my glaze which was so delish! It wasn't flat one bit and looked like a bakery donut. I decided to be "naughty" and added the glaze once I placed the doughnuts on the cooling rack. I will for sure be making these again! Could you please tell me if they will be ok for a day in room temperature or should I refrigerated it? It might not last a day lol, but just in case.

DeleteMade these as part of our weekly 'breakfast for dinner' meal and they were a huge hit with my husband and two sons. My toddlers thought I was the coolest mom ever for making doughnuts for dinner. My batter didn't have as much of a pinkish hue as I was hoping for so I just added a couple drops of red food coloring. ReplyDeletePersonally, I think almond milk would work fine as a substitute, although I've never tried it and can't say with 100% certainty. Just keep in mind that almond milk has a different taste than regular milk and therefore the finished product may have a slightly altered taste as well. I didn't like the texture of the donuts, too doughy and not the strawberry flavor I expected. If I made thes again I would cut the amount of milk and add a few more strawberries that are puréed. Also, the glaze recipe makes too much icing, I would cut the recipe in half. Joyce

I like the idea of not adding all the purée mixture and saving and adding it the icing. Icing recipe makes too much, could cut that in 1/2 recipe. DeleteAbsolutely delicious!! The only thing is that mine seemed a little too moist when sitting in the fridge for even a day. They ended up feeling a bit wet, as did the glaze. Any suggestions or thoughts on why this could've happened?
ReplyDeleteI've always kept mine at room temperature, it's possible that refrigeration somehow did this, as to why I'm not quite sure. If you enjoyed I would suggest keeping at room temperature until serving or possibly waiting to glaze until ready to serve. ReplyDeleteMade these today and they were good! I didn't have a donut pan and used a mini/micro bundt pan I had. I had leftover strawberry puree and just made the glaze out of that. I glazed them as they were served because I was afraid the glaze I made would make them soggy if I let them sit. I definitely need to double the recipe next time!

ReplyDeleteHm, I'm not sure! I haven't had the best luck with olive oil as a substitute because in my experience it lends to a flavor I don't particularly like. But that being said, why not! Try! It might be great!
DeleteThese doughnuts make great bribes to keep little boys in bed at night. Just promise them strawberry doughnuts in the morning and off to sleep they go! I have been making these treats for over a year and my entire family loves them. Sadly the 11 month old has discovered how tasty they are. Will be doubling the recipe next time. :)
